Spicy Grilled Chicken Ingredients:
7 tablespoons of olive oil
juice of 1 lime
3 garlic cloves chopped
a handful of fresh thyme
a pinch of salt
1 teaspoon of black pepper
6 boned chicken breasts
3 finely chopped red chillies
6 boned chicken breasts
Method:
In a glass bowl (or plastic bag for convenience) add the oil, lime juice, garlic, thyme, chilli, salt, pepper and finally the chicken. Mix thoroughly ensuring the chicken is well covered by the mixture. To speed up the cooking time you can cut the chicken into smaller pieces and cook on a skewer.
Leave the mixture for at least 30 minutes to absorb into the chicken. Grill under a a preheated grill on ona griddle pan or bbq.

I’ve been on a mission to perfect my homemade pizza sauce recipe. If you are going to the trouble of making your own pizza sauce it is absolute sacrelage to use a ready made tomatoe sauce when you can make something much nicer is less than five minutes. After much experimentation here is what i’ve come up with.
Ingredients:
Half a jar of tomato pasata
A handful of fresh basil leaves
1 fresh chilli (ideally a red cayenne but variety is unimpotant and depend on your taste/preference)
1 clove of garlic (sliced)
A dash of olive oil
2 fresh finely chopped tomatoes
Method:
Simply add the garlic to the hot oil and fry until it starts to go golden. Then simply through in the remaining ingrediants, bring to the boil and simmer on a low heat for a minimum of ten minutes. The longer you simmer for, the more intense the tomato flavour will get, just make sure the heat is low so it does not burn. When you are ready top use simply puch the sauce through a seive to remove and lumps of garlic, tomato, chili etc.
The key to all pasta sauce recipes is simplicity. If you go to Italy the main reason why all of the sauces taste so great is that they are made with a few simple ingredients.
Pasta Sauce Ingredients:
1 500g carton/bottle of tomato pasata
1 garlic clove finely chopped
1 tablespoon of olive oil
1 fresh red chili pepper
1 handful of chopped fresh basil leaves
Method:
Heat the olive oil in a saucepan and when hot add the garlic and cook for a minute or until it takes on a light brown colour. Next add the pasata, chili pepper and 3/4 of the basil. Stir well, turn down the heat and simmer for 10-20 minutes.
After 20 minutes remove form the heat and add to a pan containing your drained pasta. Place back on to the heat and stir for 30 seconds. Serve the pasta into bowls or plates and add some freshly grated parmesan cheese and the remainder of the fresh basil together with some freshly ground black pepper.
Pasta sauce recipes for shop bought sauces often contain lots of salt and preservatives in order to increase their shelf life. However as can be seen with the sauce recipe above pasta sauce recipes need not be complicated, infact the simple ones are often the best.
