Sweet chilli sauce is a staple on any Thai table. It can be used as both a condiment as well as an addition to other recipes. I work great when served with starters such as our spicy grilled tofu recipe. Best of all it only take minutes to prepare.
Sweet Chilli Sauce Ingredients:
7 red chillies
250 ml of water
250 ml of rice wine
300 grams of sugar
Method:
Finely chop the chillies having removed the seeds. Add the chillies and the other ingrediants into a pan and simmer on a low heat for about 30 minutes. The mixture should thicken up a bit.
Once made the sauce should keep for a couple of months in the fridge. It works great as a marinade for various chicken dishes or can be added to stir fries to add some heat alongside a sweet flavour.

Everyone like eggs (well most people anyway). This recipe takes the average omelette to the next level.
Masala Omelette Ingredients:
2 Eggs
2 finger chillies (small green)
2 tomatoes
1/2 a green pepper (chopped)
1/4 of a chopped onion
a handful of chopped corriander
1 knob of butter
salt and pepper
a dash of milk
Method:
Break the eggs into a bowl and add a dash of milk and a pinch of salt and pepper. Beat for about 30 seconds with a fork or a whisk.
Heat the butter in a small frying pan and gently fry off the onions for a couple of minutes. Add the green pepper and fry for another 2 minutes.
Once the onion and pepper has softened add the chillies and tomato before pouring over the egg/milk mixture.
Stir briefly before leaving on a low to medium heat for 3 minutes.
Give the pan a shake in order to unstick the omelette from the bottom of the pan. To cook the top you can either fold the omelette in half and continue to cook or simple place under a hot grill for a couple of minutes.

This spicy gumbo recipe is a great variation on the stew o soup that originates from Louisiana. This gumbo has more spice than most making it ideal for those cold winter nights when you need warming up.
The great thing about dishes like Gumbo is that you can easily achange or adapt a recipe such as this one to cater for both your tastes and also the availability of ingrediants. As a result feel free to play around with the recipe below.
Spicy Gumbo Ingredients:
1/4 cup of vegetable oil
1/4 cup of flour
1 chopped onion
2 carrots chopped
2 corgettes chopped
2 chopped celery sticks
1 teaspoon of cayenne pepper
2 chopped sweet peppers
500 grams of cooked crab meat
50 grams of prawns
1 litre of chicken stock
Method:
First you need to make a roux by heatiing the oil in a pan and gently adding the flour stirrring constantly. Continue to cook slowly for 15 minutes.
Add the vegetables and sautee lightly for 3-4 minutes before adding the crab and prawns. Finally add the chicken stock and simmer on a medium heat for 20 minutes.
Serve the spicy gumbo in bowls with some freshly cooked plain rice.
