Stuffed Romano Peppers with Feta, Capers and Chilli

Mediterranean-inspired stuffed Romano peppers filled with feta, capers, fresh chilli and basil. Simple, colourful and ready in 40 minutes.

Ingredients
  

  • 4 Romano peppers sweet pointed peppers
  • 200 g Feta cheese
  • 1 Red chillie fresh
  • 1/2 Clove of garlic
  • 1 tbsp Capers roughly chopped
  • 1 tsp Dried oregano
  • 2 tbsp Olive oil
  • 1 Handful of fresh basil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 180°C (160°C fan / Gas Mark 4).
  2. Using a sharp knife, make a long slit down one side of each Romano pepper from stem to tip. Open carefully and use a teaspoon to scrape out the seeds and white membrane, taking care not to tear the pepper open completely — you want it to act as a boat for the filling.
  3. Finely chop the red chilli and very finely slice or crush the garlic. Roughly chop the capers if they're large.
  4. Slice the feta into pieces that will fit lengthways inside each pepper. Lay the feta in a single layer inside each pepper.
  5. Distribute the chopped chilli, garlic and capers evenly over the feta inside each pepper. Tuck in the fresh basil leaves. Sprinkle over the dried oregano and a good twist of black pepper. Taste before adding salt — feta is already quite salty.
  6. Drizzle a little olive oil over the filling in each pepper.
  7. Place the stuffed peppers on a baking tray, drizzle lightly with olive oil over the outside of the peppers, and roast for 25-30 minutes until the peppers have softened and are beginning to colour at the edges but still hold their shape. The feta should be golden and slightly caramelised on top.
  8. Remove from the oven and rest for 5 minutes before serving.

Notes

  • Romano peppers are elongated sweet peppers — look for them at supermarkets or greengrocers. They're naturally sweeter than standard bell peppers and roast beautifully
  • Don't worry if the peppers split slightly during cooking — this is normal and doesn't affect the flavour
  • For a slightly spicier version use two chillies or substitute a bird's eye chilli for more heat
  • Leftovers keep for 2 days in the fridge and reheat well in a low oven
